CoCo... 16 weeks!

Our first movie night wasn't even supposed to be a movie night! I had planned a Cinco de Mayo dinner of tacos and margaritas and then suddenly realized, "Duh! CoCo!" Cubby had gotten CoCo in his Easter basket and we loved it. It's such a beautiful story about the Mexican culture and traditions. If you haven't seen it, DO IT. And make sure you have tissues because the ending is just a total tear-jerker.

I found some easy printables for Cubby and Lady A to kill time with. I also loved the family tree printable. (Get your own here). Cubby was a little confused at first: "Ok these are my ancestors, but who are Lady A's ancestors?" Once we got that part sorted, he enjoyed filling it out. My mom took him to breakfast the next morning and he took it with him so that she could help him fill out her branches. I love that it was a way for him to learn more about past generations. When I was little, I heard so many stories from my great-aunts about our family. It was a different time, I guess, but I want that for my kids, too. This was a nice jumping off point for those kinds of conversations.

Anyway, I know that Cinco de Mayo is more of a US deal and an excuse to drink margs and Corona, but why not?! So I made some Chili-Lime Chicken Tacos and went with the crunchy tacos because that just seems more authentic to me lol. I knew we'd be having tequila in our margaritas, but I wanted to the kids to be able to participate so I found a recipe for virgin margaritas that turned out to be super delicious. A cup of OJ, 1/3 cup of lime juice, and about a cup of sugar all blended up and -BOOM- margaritas for all. I watered it down substantially for Lady A and she was still all about it.


Since I hadn't officially planned for this night, we hadn't planned on a dessert. BUT I found this recipe for Sweet & Spicy Popcorn that was totally delicious. I didn't have any chipotle powder so I subbed with chili powder. The spicy only came through on a handful of bites, so it was a perfect balance. It was a hit with everyone!



In the week since we watched, Lady A has asked for "GoCo" daily! I'm just glad we've expanded her repertoire beyond Frozen and Moana! Hopefully she'll ask for each week's movie over and over so that she's really ready for our trip in August!
